Healthy Partying

I offered to take my friend some appetizers last Saturday for our church's Christmas Home Tour. She was the first one on the tour. I didn't have a lot of time, and whatever I brought needed to be healthy.  That is, if I wanted to eat them too. I didn't want all my hard work and literal pain in the *** to be for nothing. Recently my personal trainer recommended that I check out eatingwell.com.  
I thought I'd share some new recipes that I found there.  They were a big hit, inhaled actually.  These are Apricot Canapes.  It's an interesting combination of dried apricots, blue cheese, pistachios and honey.
I also made these Tomato Basil Skewers, so simple and YUMMY! I used my basil olive oil from Temecula Olive Oil Company. I used garlic olive oil the second time I made them. I couldn't find the small mozzarella balls. Maybe too many other people were making this too. So, I just bought a log of fresh mozzarella and then cut it into chunks.  

I also made proscuitto wrapped cantelope. This is Martha's recipe using honeydew. I like cantelope better. These were all very quick and simple appetizers that were healthy also. The crowd didn't seem to mind that they were healthy.  I think I'll go search the site for something sweet.
