Comfort Food Weather

It is very rare here in Southern California that we feel like making "comfort" food. Even in October.  Usually salads, fresh fruit and grilled meats are more in line with our weather.  But this week, we've been blessed with actual "Fallish" weather.  So, I'm in a comfort food making frenzy.  First of all, yesterday, I made my Mom's Chicken Noodle Soup.  I posted the recipe here last February.  Today I'm eating leftovers for lunch.  
Since I'm heading for work in about an hour, I decided to make Crock Pot Mac and Cheese. This is not for the diet conscious, unfortunately. Is there a Mac and Cheese that fits that description? I don't make this often, but have tried different recipes in the search for the perfect Mac and Cheese. I don't think I've found it yet.  
Here's the end result.  It was good.  Not AMAZING.  I'm really not sure what AMAZING entails with regard to Mac and Cheese.  Does anyone have a recipe they'd be willing to share?  Here's this recipe:

Crock Pot Mac and Cheese
1 16 oz pkg of macaroni, cooked and drained
1 Tbl cooking oil
1 13 oz. can evaporated milk
1 1/2 cups milk
1 tsp salt
1/2 tsp pepper
3 cups shredded sharp cheddar cheese
1/2 cup melted butter

Lightly grease the crock pot and mix in the macaroni and oil together.  Next, add all remaining ingredients.  Stir, cover, cook on low for 3 to 4 hours, stirring occasionally.

  2. You can probably get this from the Food Network website, or she has a cookbook. Delilah's 7-cheese. It looks SO good but Matt is forbidding me to make it. Maybe someday! 2 pounds of noodles, 1 doz eggs, some absurd amount, like 4 pounds total of cheese, including velveeta! She did a throwdown with Bobby Flay. It has Gruyere and other numminess as well.

    The ones I usually make are Alton Brown's baked and his stove-top. SO good. My grandpa makes the best mac and cheese (Baked). I am tempted to make Alton's left overs...he takes the baked mac an cheese and makes slices of it, and fries them.

  3. Isn't this weather great?! I've been making comfy foods this week too...applesauce, sweet cooked carrots (like Cracker Barrel), mashed potatoes with carmelized onions and garlic...tonight I'm making a chowder with potatoes, cheese, ham, carrots and corn. Yuuummmmm!

    That mac n cheese looks yummy! I never thought about making it in the crock pot. That would make it so easy and convenient. I have several ways of making it...on the stove and in the oven. Sometimes I even add green chilis to kick up the flavor a bit. Diced tomatoes on top is good too. I LOVE mac n cheese! :-D'
