Reese's Bars

We met friends for lunch today.  Friend's we haven't seen in at least 6 years, and they only live about 90 minutes away! We ate at Tresino's again, my neighbors' new Italian restaurant that is F A B U L O U S!  I ate there three times this week.  Woah, don't tell. Hey, I'm trying to keep their business going!

Anyway, back to the visiting friends.  Since they were coming to the house after lunch I wanted a little something sweet to offer them. Did I think about this ahead of time? Of course not.  I thought a Fallish pie would be yummy.  Nope, no apples, or peaches.  I thought about a pumpkin pie, but, no evaporated milk.  I thought about Williams-Sonoma pumpkin bars, but no yellow cake mix.  I did not have time to run to the store.  Running to the store is a long run, just an FYI.  So, I made Reese's Bars instead.  They are not particularly Fallish, but are indeed very good. You just might have all the ingredients in your pantry, right now!

REESE'S BARS

2 cups powdered sugar
1 cup peanut butter (I use creamy)
1 cup finely crushed graham crackers (about 6 full crackers)
1 stick melted margarine/butter (I use butter)
I used a mortal and pestle to crush the crackers.  This is not fine yet, by the way. 
A food processor would be MUCH faster.
Mix ingredients together.
Spread on the bottom of a small cookie sheet.  This can be tricky, but the back of a metal spoon helps. Melt a 12 oz bag of chocolate chips and spread over the top of the peanut butter mixture. Place in refrigerator for 10 minutes.  Take out and cut into squares.  Replace in refrigerator until hard and ready to serve.  These need to stay cold. 

So rich, so fast and so good!

  1. I'm glad you reconnected, and ate Italian, AND made these bars. There are a few problems here, however: they are RICH, and FAST, and GOOD! The other problem? I do have all the ingredients...and they're calling out to me...help!
